Apple Cake

200 g of teff 

150 g butter

150g sugar 

3 eggs

1 teaspoon cinnamon

4 apples

1 lemon

1 sachet of baking powder 

 

cut the apples 2 in cubes and 2 in thin slices cover them with  one spoon of sugar , half a lemon juice and a bit of lemon zest 

prepare the dough mixing sugar with 2 egg yolks mix well then incorporate the   melted butter the teff ( already mixed with the baking powder) 

a pinch of salt and the apple cubes and at the end the beaten white eggs 

if the mix is too thick add a bit of warm milk 

put it in a baking tray and place the thin slices on the top bake in a hot oven for 45 min

35g sugar or any other sweetener

1 Tsp vanilla extract

Heat the oven to 190C/375F/Gas 5.

Beat the butter and the sugar together until smooth.

Stir in the flour to get a smooth paste. Turn on to a work surface and gently roll out until the paste is 1cm/½in thick.

Cut into rounds or fingers and place onto a baking tray. Sprinkle with caster sugar and chill in the fridge for 20 minutes.

Bake in the oven for 15-20 minutes, or until pale golden-brown. Set aside to cool on a wire rack.
